WHAT?
1 ½ - 2 heaped teaspoons tarama (not very easily available in the UK; if you can choose, buy white tarama with no added colourings)
1 white onion (red onion may add colour)
2 cloves garlic
Little bit of chilli
2 bread slices (I like brioche type) soaked in water - then drained well
½ lemon juice
Dill
Approx. 40ml. Greek extra virgin olive oil @ladi_biosasSalt (try before you add) HOW TO? 1️⃣Chop white onion, garlic, chilli and dill. Mix with the tarama. This recipe needs adding air, not mashing. 2️⃣Add the bread and the lemon juice. 3️⃣Whip with a mixer. You need to add air to the mix, at the same time, add very thinly the olive oil. Think of it as a mayonnaise. Carry on whipping. That’s the secret for a lovely airy taramasalata. 4️⃣It’s a trial and error case. Whip for some more, adding more air. Test to see if it needs anything else.
