Wild rocket and wild garlic pesto pasta

WHAT?

50g. Rocket

50g. Wild garlic

50g. @gravieranaxou or a mature cheddar

½ chilli

30-40ml. Good extra virgin olive oil

10-15 pine nut kernels

Pepper

½ teaspoon of white wine vinegar

120g. Matsata pasta (alt. Linguine)

8-10 scallops


HOW TO?

1️⃣Chop the rocket, garlic, cheese, chilli and pine nuts in a blender. Add the vinegar and the olive oil slowly. The way you make a mayonnaise. Pesto is ready. Add pepper to taste.

2️⃣Marinate the scallops in the pesto for 3-4 hours.

3️⃣In a saucepan with boiling water add the pasta and cook for 8 minutes. In a frying pan with a little olive oil, add the pesto with the scallops to cook. For 2-3 minutes each side.

4️⃣Add the pasta with two big spoons of boiling water stock. Mix well until it forms a beautiful sauce.
