Zamponotyropita with Sygklino meat from Mani

WHAT? 1 packet of filo sheets

200g. Feta cheese

200g. @gravieranaxou cheese

60g. Sygklino meat from Mani (or other cured meat)

3 tablespoons olive oil

3 heaped tablespoons flour

500ml. Stock (hot)

½ chopped red pepper

1 onion, Bunch of chopped parsley

Pepper

HOW TO? 1️⃣In a pan sauté the onion, chilli and garlic in the olive oil for two minutes. Add the flour and let the batter cook and bubble. 2️⃣Add the hot stock and start whisking carefully. When it’s made a thicker sauce, switch off the heat. 3️⃣Grate the cheeses and mix them in. Finely chop the meat and add in. Add red pepper and parsley. Grind pepper. 4️⃣In a greased tray lay one filo sheet. Brush the filo in olive oil. Add the next. Brush again all over. Do the same for half the sheets. Spread the cheese mixture in evenly.

5️⃣Lay one filo on top. Then brush with olive oil. Again with all the filo. Brush the top filo with olive oil. Fold the edges one over the other. Cut the pie in pieces and lay sesame seeds.

6️⃣Cook at 180 degree preheated oven for 50 minutes.
