WHAT?
A few lettuce leaves
Cherry tomatoes (5-6)
6-7 small potatoes cooked
2 eggs
1 spring onion
2-3 cloves of garlic
8 olives, a few capers
1 packet of anchovies
Parsley, basil
2-3 tablespoons Greek olive oil
1 tablespoon red wine vinegar
1 teaspoon mustard
1 teaspoon honey
Salt, pepper
Feta to serve
HOW TO?
1️⃣In a blender mash 2-3 anchovy fillets with the olive oil, mustard, vinegar, honey to make the sauce.
2️⃣Lightly toss the lettuce with the potatoes, chopped tomatoes, chopped onion and garlic.
3️⃣Soft-boil the eggs for 4-5 minutes. Place on top. Score and let the yolk come out.
4️⃣Add the olives, capers, anchovies, basil and parsley and pour the sauce over the salad. Break some feta. Serve with warm bread.
