WHAT?
1 avocado
150g. Brown rice1 onion, 2 garlic cloves - all chopped
4-5 cherry tomatoes chopped
1 spring onion chopped
Parsley chopped
300ml. Vegetable stock
1 teaspoon olive oil @ladi_biosas For the sauce
½ lemon juice
2-3 tablespoons of extra virgin olive oil @ ladi_biosas
Salt, pepper, oregano
HOW TO? 1️⃣Sauté onion and garlic in olive oil. Add the rice and sauté. 2️⃣Add the stock. Proportion rice to water is 1 to 2 and a bit, so 1 cup rice, 2 and a bit cups of water. 3️⃣Bring to boil in high heat. When it starts bubbling, move to medium heat and cover. When it starts creating holes at the top, switch off the heat and cover with a towel for the rice to drink all the water.
4️⃣Chop all other ingredients - in slices. 5️⃣Mix all the sauce ingredients and pour over the salad.
