WHAT?
50g. Cooked lentils
50g. Rice
100ml. Water
70g. Pork
1 red pepper
1 onion, 2-3 garlic cloves, chilli
2-3 cherry tomatoes
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Some olives
1 teaspoon mustard
Handful of rocket
Salt, pepper, thyme
HOW TO?
1️⃣In a saucepan, sauté chopped onion, garlic, chilli and pepper for 2-3 minutes.
2️⃣Add the vinegar and let it evaporate. Add the chopped pork and rice and cook at medium heat for 2-3 minutes. Add the water and lower the heat. Let it cook. The rice will absorb the water and start creating holes to the top. At the point switch off the heat and add a tea towel at top and the steam get it for five minutes.
3️⃣Add the tomatoes, cooked lentils, olives, mustard and rocket and loosely mix. Salt pepper and thyme and you’re ready to go.
