WHAT? 100g. Butter (leave at room temperature for 10 minute) 80g. Sugar 1/2 Lemon zest and juice 2 eggs 150g. Self raising flour 1 heaped tablespoon Greek yoghurt 4 figs Walnuts (handful) Cinnamon HOW TO? 1️⃣Whisk the butter and the sugar for a couple of minutes. Add the eggs and continue. 2️⃣Add lemon zest, flour and yoghurt and continue to mix. Stop mixing. We peel and cut the figs and mix in, plus walnuts and cinnamon. 3️⃣Butter and flour a cake tin. Add the mixture and cook at pre-heated 180 degrees oven for 40 minutes. 4️⃣Serve with a dollop of Greek yoghurt and extra figs.
