Lemon spoon preserve

WHAT?

6 big juicy unwaxed lemons

1 lemon juice

300ml. Water

500g. Sugar

2-3 saffron stems


HOW TO?

1️⃣Score the lemons and remove the skin. Easiest way is to score in the middle and sideways and remove with your hands.

2️⃣Blanch in 50ml. water for 6 minutes. Let them drink all the water.

3️⃣Cook with lid closed in medium heat with 200ml. Water for 1 ¼ hours to soften. Control the water levels.

4️⃣In saucepan, make the syrup with water and the sugar. Let it cook for ten minutes. Add the lemons and cook for another ten minutes. At the end add the lemon juice and the saffron. Store in clean jars.
