Greek cheesecake with Katiki cheese, honey and dark chocolate

WHAT?

200g. @katikidomokou fresh cheese or other soft white cheese

200g. Greek yoghurt

200g. Dark chocolate

10 tablespoons Greek honey

1 teaspoon lemon juice

200g. Crushed bread rusk with carob


HOW TO?

1️⃣Crush the bread rusk and mix in 5 tablespoons honey, so the mixture sticks and creates a solid base. Lay at the bottom of a cake tin and push it to be more solid.

2️⃣In a Bain Marie pot, melt the chocolate slowly. Once melted, remove from heat and mix in the cheese and the yoghurt . Add the lemon and the honey. 3️⃣Lay on top of the bread rusk and leave to set for 3 hours. Serve with extra honey, shaving of chocolate and strawberries.
