WHAT?
400g. Goat
3 bay leaves, allspice
1 small gem lettuce
Parsley, dill
3-4 cloves of garlic
½ spring onion
6-7 artichoke hearts
6-7 cherry tomatoes
100g. Feta cheese
For the sauce
2 teaspoons mustard
1 teaspoon honey
2 tablespoons extra virgin olive oil
1 teaspoon vinegar
Salt, pepper
HOW TO?
1️⃣Slow cook the goat for three hours in bay leaves, allspice and boiling water.
2️⃣Chop lettuce. The best way is roughly with your hands. Finely chop garlic and spring onion and herbs. Put in a bowl.
3️⃣In hot pan, brown the artichokes -3 minutes each side, the tomatoes cut in half, and the feta cheese.
4️⃣Whisk the sauce. Olive oil, vinegar, mustard and honey. For 30 seconds to create a homogenous sauce. Set the salad. Add the leaves, the tomatoes and artichokes, the cheese and toss in the sauce.
