Light and tasty chicken salad

WHAT?

150g cooked chicken breast or thigh fillets (not fried) cut in pieces

½ cup sweet corn, ½ cup peas

1 carrot in cubes

1 sweet potato cooked and sliced

½ red pepper

1 onion, a few cloves of garlic

Bunch of parsley

10-15 capers

2-3 tablespoons Greek yoghurt

For the sauce

1 teaspoon petimezi (molasses), red wine vinegar to taste

Salt, pepper, oregano

Two tablespoons of extra virgin olive oil @ladi_biosas


HOW?

1️⃣Mix all of ingredients

2️⃣Mix yoghurt, olive oil, red wine vinegar and petimezi to make the sauce. Add salt, pepper and oregano to taste. Pour the sauce and enjoy.
