WHAT?
60g. Carob biscuits (alt. Use tea or ginger)
6 tablespoons Greek honey
150g. Greek yoghurt
zest of one lemon
juice of one lemon
3 figs
handful of cashew nuts
mint to serve
HOW TO?
1️⃣Crush the biscuits and mix in 2 tablespoons of honey. 2️⃣Mix the yoghurt with two tablespoons honey and the lemon zest (keep some zest for topping.
3️⃣Make the fig paste. Peel the figs and chop them. Add to a pan figs, lemon juice and 2 tablespoons honey. Cook for 15 minutes in low heat until a paste is formed.
4️⃣In glasses or bowls, make the layers. First start with the biscuit mix. Press a little bit, then the yoghurt mix and finally the fig paste. Serve with mint and some lemon zest.
