WHAT?
100g. Arborio risotto rice
1 onion, a few garlic cloves
Chilli
Splash of white wine
2 bay leaves
200g. Greens (spinach, chervil, stamnagkathi)
2 tablespoons EVOO @ladi_biosas
Approximately 1.5 litres of stock
Salt, pepper, thyme
Lemon, olive oil and grated feta to serve
HOW TO?
1️⃣Start with sautéing the onion, garlic, ground pepper and chilli in olive oil.
2️⃣Add the rice and sauté for two minutes. Add the white wine and let the alcohol steam away.
3️⃣Add the bay leaves and start the process to make the risotto. Add three big spoons of stock and let the rice drink the water. Add some more and repeat.
4️⃣After 15 minutes, it should be ready.
5️⃣Add the greens with salt for 3-4 minutes. We don’t want to boil them, we want to sauté.
6️⃣Serve with grated feta, lemon and olive oil.
