Runner bean salad

WHAT?

100g cooked runner beans (cleaned, edges and ends removed)

50g cooked sweet corn

¼ red peppers

3-4 small tomatoes

A few olives

6-8 sardines

Parsley, mint, a few capers

1-2 soft boiled eggs

Spring onions, 2-3 cloves garlic, little bit of chilli


For the sauce

1-2 tablespoons extra virgin olive oil @ladi_biosas

1-2 teaspoons of mustard

1-2 teaspoons vinegar

Salt, pepper, dry oregano or thyme

HOW TO?

1️⃣Mix runner beans, sweet corn, peppers, olives, tomatoes, parsley and mint in a bowl.

2️⃣Mix well the sauce.

3️⃣Add to the bowl capers, cooked sardines and the cooked eggs.

4️⃣Slice the egg so the yolk runs in the sauce. Add the sauce ingredients.
