Tuna and egg salad

WHAT?

100g. Wild rocket

4 eggs

6-7 cherry tomatoes

5-6 olives

½ spring onion, 2-3 garlic cloves

1 tin of tuna

10-15 capers


For the sauce

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey

1 teaspoon mustard

Salt, pepper, thyme


HOW TO?

1️⃣Chop rocket and herbs. Mix in bowl. Chop tomatoes.

2️⃣Boil the eggs for five minutes.

3️⃣Add the tomatoes, olives, capers and tuna to the salad. Whisk the sauce ingredients. Mix loosely with your hands.
