WHAT?
150g. Linguine or matsata pasta
8 sardines filleted
1 tablespoon tomato paste (peltes)
1 tablespoon olive oil
1 spring onion chopped
Chilli
10 capers
Chopped 2-3 garlic cloves
2 medium tomatoes chopped
Pinch of sugar
Shot of ouzo
Pepper, salt, oregano
1 teaspoon tahini diluted in two teaspoons lemon juice
For the marinade
Chopped garlic, chilli, salt, pepper, lemon juice
HOW TO?
1️⃣Fillet the sardines. Chop head and tail and sideways cut the fish and gently remove the bone. Marinate for two hours in all marinade ingredients.
2️⃣Sauté in olive oil the chopped chilli, onion garlic and tomato paste for two minutes. Add the ouzo and let it evaporate. Add the tomatoes and the sugar - let it cook for ten minutes.
3️⃣Cook the pasta in boiling water for 8 minutes. Add the pasta in the sauce and three big spoons of the water they’ve been cooking. Add the sardines and capers and close the lid for two minutes in low heat for the sardines to steam.
4️⃣Take the sardines off. In lemon juice dilute the tahini and add to the pasta. Mix well. Stage the plate with the sardines at the top, lots of pepper and fresh oregano.
