WHAT?
150g. Mixed beans - soaked overnight in hot water
1 red pepper - cooked and chopped
½ carrot chopped
7-8 olives
1 onion, a few garlic cloves chopped
1 spring onion
Chilli
Bunch of parsley, bunch of coriander
2-3 tablespoons extra virgin olive oil
1 teaspoon red wine vinegar
1 teaspoon mustard
½ teaspoon honey
Salt, pepper HOW TO? 1️⃣Cook the soaked beans in boiling water with water and a carrot. Let cool.
2️⃣Whisk olive oil, vinegar, mustard and honey to create a sauce. 3️⃣Toss all rest of salad ingredients. Add the beans.
4️⃣Add the sauce and some pepper and salt.
