An amazing sweet potato and anchovy salad

WHAT?

1 medium sweet potato

A few anchovies

15 capers

3 cherry tomatoes

1 spring onion, 2-3 garlic cloves; all chopped Chilli

1 carrot chopped

2 eggs cooked

Parsley

Olives


For the sauce

2-3 tablespoons extra virgin olive oil

½ teaspoon mustard

1 teaspoon red wine vinegar

Freshly ground pepper, salt

Parsley to serve

HOW TO?

1️⃣Cook the sweet potato in boiling water for 20 minutes and soft or hard boil the eggs (3 or 6 minutes) in boiling water. Chop the sweet potato.

2️⃣Chop all the other ingredients (not the fish).

3️⃣Toss in a bowl.

4️⃣Whisk the sauce and add to the salad. Add the fish at top.
