Bacalao stew

WHAT?

400g. Bacalao fish or cod

1 sweet potato

1 carrot

1 onion, 2-3 garlic clove, chilli - chopped

1 teaspoon tomato paste (peltes), 2 big tomatoes mashed

100ml. Water

1 vegetable stock

Pinch of sugar, salt, pepper

2-3 tablespoons red wine vinegar

2 tablespoons olive oil

parsley to serve


HOW TO?

1️⃣In saucepan, sauté in medium heat in the olive oil the onion, garlic and chilli for two minutes. Add the peppercorns and the tomato paste and continue for an extra two minutes. Splash the vinegar and off the heat.

2️⃣Add the chopped carrot and potatoes and mix in. Transfer to an oven dish.

3️⃣Add the bacalao, the tomatoes, water, vegetable stockand the sugar, seal it tightly with foil and cook in the oven at 200 degrees for 45 minutes. Serve with parsley.
