WHAT?
For two thin ‘n‘ crispy pizzas
250g. Strong good quality flour
13g. Fresh yeast or 1 ¾ teaspoon dried yeast
130ml. Tepid water
Pinch of sugar
¾ teaspoon salt
2-3 tablespoons semolina
WHAT?
1️⃣Sieve the flour with the salt to a bowl.
2️⃣Dilute the yeast to the water and add some sugar. Let it activate for 5 minutes - it will start having white dust at top.
3️⃣Add the water, yeast mix to the flour. Start mixing very well for 5 minutes to have an elastic pastry. Let it rise covered with cling film in a bowl with semolina flour for two to three hours. Uncover and mix again. Put back in the bowl and let it rise. Add semolina and cover with cling film.
4️⃣Spread semolina in your worktop. Make two circle pizzas - diameter about 20cm. Add any topping you like and cook in oven for 20 minutes (in pizza oven 7-10 minutes).
