Black eyed beans with tuna and egg

WHAT?

70g. Black eyed beans

1 bay leaf

1 chopped tomato

Springs onions, mint, parsley, dill - all chopped

1/2 pepper

Fresh garlic - chopped

1 small cucumber - chopped

1 tuna tin

2 eggs - soft boiled

Olives

1 tablespoon red wine vinegar, 2 tablespoons extra virgin olive oil

½ teaspoon mustard

½ teaspoon of honey

Oregano, salt, pepper

HOW TO?

1️⃣Cook the beans with 1 bay leaf for 25 minutes until soft.

2️⃣Chop the pepper in small pieces. The tomato in quarters, the cucumber in quarters, spring onions, mint, parsley, dill and fresh garlic. Add in a bowl. Chop the carrot.

3️⃣In a bowl mix chopped vegetables, olives and beans.

4️⃣Add the tuna on top and lightly toss the salad with the vinegar, olive oil, mustard.

5️⃣Soft boil the eggs and add them on top.
