Buckwheat with Mediterranean vegetables

WHAT?

1 aubergine, 1 pepper, 1 tomato, Garlic cloves

Fresh basil

Burrata Italian cheese (alt. Mozzarella or other fresh cheese)

½ cup of buckwheat (φαγοπυρο)

Parsley

1 cup of hot water

A few spoons EVOO @ladi_biosas

2 tablespoons of lemon juice

1 tablespoon of mustard

1 teaspoon honey

Pepper, oregano


HOW TO?

1️⃣Chop and cook in oven for an hour the peppers, garlic, aubergines, peppers, garlic, tomatoes with some olive oil and lemon juice, oregano and pepper.

2️⃣In hot water, add the buckwheat and let it for an hour to soak water.

3️⃣Chop and mix the vegetables. Add the cheese and the basil. Mix with the buckwheat.

4️⃣Mix honey with lemon, olive oil and add the beautiful sauce. Add salt and pepper to taste.
