WHAT?
1 whole fish
1 lemon
Garlic cloves
2-3 bay leaves
A few rosemary branches
2 tomatoes in slices
200g. Greens (spinach, chervil, stamnagkathi)
3-4 tablespoons extra virgin olive oil
Salt, pepper, thyme
HOW TO?
1️⃣In a greased tray, add the greens, salt and pepper.
2️⃣Cut the lemon in half. One half cut in slices and add in the fish’s belly. Add rosemary and bay, as well as garlic in the gutted and descaled fish’s belly.
3️⃣Put the tomatoes slices at the top of the fish. Add some olive oil, the rest of the lemon, pepper and salt.
4️⃣Cover well with a grease proof paper and cook at 180 degrees for 35-40 minutes.
5️⃣Pour some extra olive oil and lemon and serve.
