Easy, delicious yoghurt rice pudding

WHAT?

1 cup of white rice

2 ½ cups of boiling water

1 teaspoon lemon juice

4 teaspoons sugar

5 heaped tablespoons Greek yoghurt

Pinch of sugar

2 teaspoons mastiha liqueur (alt. Vanilla for milder tastes)

2 tablespoons honey

Cinnamon, fresh basil for topping


HOW TO?

1️⃣Start boiling the rice in low heat in the water. Add the sugar, the lemon juice, the mastiha liqueur and the salt.

2️⃣About 10-13 minutes on, the rice will have sucked most of the water leaving a little bit of cream of water. Take off the heat.

3️⃣Mix the yoghurt in and serve in 4 bowls with honey, cinnamon and basil.
