WHAT? 4 egg whites
50g. @katikidomokou cheese or cottage cheese
50g. Greek yoghurt
1 cooked aubergine
Splash of vinegar
1 tomato chopped, 3 garlic cloves, chilli
Salt, pepper, oregano
1 tablespoon olive oil HOW TO?
1️⃣In a bowl loosely mix the egg whites, the cheese, yoghurt and vinegar.
2️⃣Chop tomatoes, chilli, garlic and spring onion. Sauté in the olive oil with the cooked aubergine. 3️⃣Add the egg mix and cook for 3 minutes. Toss and turn. 4️⃣Serve with oregano and pepper.
