WHAT?
4 eggs
150g. Apaki cured meat
2 medium potatoes
1-2 teaspoons of tomato paste
1 onion, 2-3 cloves garlic, chilli
1-2 tablespoons Greek yoghurt
15-20 capers
Salt, pepper
HOW TO?
1️⃣Slice the potatoes and pre-cook in boiling water for 10-15 minutes. In pan, sauté with no oil the apaki, which will bring its own oil.
2️⃣Sauté the chopped chilli, onion and garlic and tomato paste for two minutes.
3️⃣Add the potatoes and tomato paste and crispen for four minutes. Put the mixture in a greased tray.
4️⃣In bowl, mix yoghurt and eggs. Add capers. Pour to the tray and cook in preheated oven at 180 degrees for 15 minutes. Serve with yoghurt and mint.
