Eggs with artichokes and a saffron sauce

WHAT? 4 eggs

7 fresh artichokes, chopped

1 onion, 2 garlic cloves, chilli, dill

1 teaspoon honey, 3-4 stems of saffron

salt, pepper, thyme

fresh cheese for topping

olive oil


HOW TO? 1️⃣Chop the artichokes. Sauté in medium heat in olive oil for 7 minutes each side. Add the honey and thyme and caramelise.

2️⃣Chop onion, garlic and chilli and sauté in the same pan for 3 minutes at medium heat. Add the saffron stems. 3️⃣At this point make four holes and break the eggs. Add a lid and fry for 4 minutes. Chop the dill and add to the top for a second. Serve with pepper, salt and fresh cheese.
