Spanish tortilla (with a Greek twist

WHAT?

4 eggs

5 medium potatoes

½ onion, 2-3 garlic cloves, chilli

½ spring onion

1 red pepper

Parsley

1-2 tablespoons olive oil

50g. Feta cheese

Paprika to serve

Salt, pepper, oregano


HOW TO?

1️⃣in boiling water, peel, chop in big chunks and cook the potatoes to soften (10-15 minutes).

2️⃣ In 1 tablespoon olive oil, chop and sauté the onion, garlic, chilli at medium heat. The pan needs to be small so the tortilla gets thick. Add the cooked potato and red pepper and brown for 2-3 minutes.

3️⃣In a bowl loosely beat the eggs and add the feta. Pour in the pan and cook for five minutes. Add parsley at top of the omelette. Using a plate, toss and cook the other side for 2-3 minutes.

4️⃣Serve with paprika and extra pepper.
