Oven omelette with mushrooms

WHAT?

4 eggs

100g. Wild mushrooms

1 onion, 2 garlic cloves, chilli

1 tablespoon tomato paste

2 tablespoons red wine vinegar

1 tablespoon Greek yoghurt

Parsley

1 tablespoon olive oil

Paprika

3 teaspoons lemon juice

Salt, pepper, oregano


HOW TO?

1️⃣In high heat sauté the mushrooms in the olive oil for three minutes. Chop and add the onion, garlic, and chilli and the tomato paste sauté for two more minutes. Off the heat.

2️⃣Mix the eggs with the mushrooms mix and the Greek yoghurt and add in a greased tray. Cook in the oven at 180 degrees temperature for 25-30 minutes.

3️⃣Serve with paprika, lemon juice and parsley.
