Eggs on filo pastry

WHAT?

4 free range eggs

4 filo pastry sheets

Onion, garlic, 4 cherry tomatoes

½ pepper

½ courgette

2 tablespoons olive oil

Vinegar

Parsley, spring onion, mint

Pinch of salt, pepper, oregano, paprika

Feta to serve HOW TO?

1️⃣In olive oil sauté the chopped courgette for five minutes. Add chopped onion, garlic, chilli and pepper for two minutes.

2️⃣Chop the tomatoes and the spring onion. Add in the pan.

3️⃣Add the vinegar to steam away. Remove from the heat.

4️⃣In a greased pan, lay the filos with some olive oil in between each layer. Top - place the sauce and the eggs. Cook in preheated oven at 200 degrees for 15 minutes to cook the eggs. Serve with parsley, paprika, mint, oregano and pepper. Feta to serve.
