Eggs on pastry

WHAT?

1 pastry sheet (puff pastry, but ideally σφολιάτα French type)

4 eggs

1 chopped onion, 3 cloves garlic

Chilli

1 grated carrot

2 small tomatoes

1 teaspoon tomato paste (peltes)

Pepper, salt, oregano, pinch of sugar

2 tablespoons Greek olive oil @ladi_biosas

2 tablespoons red wine vinegar

Pepper, salt if needed, thyme

Parsley, mint and feta to serve

HOW TO?

1️⃣In pan with olive oil, sauté the onion, garlic, carrot and ground pepper in medium heat for two minutes. 2️⃣Add the tomato paste and let it cook. Add the tomatoes and the sugar. Cook for three minutes.

3️⃣In a greased tray, lay the pastry. Add the sauce on top.

4️⃣Make four little holes and add the eggs.

5️⃣Cook in preheated oven for 14-18 minutes at 210 degrees.

6️⃣Serve with feta, thyme, mint and some red wine vinegar.
