Eggs with kavourmas meat

WHAT?

150g. Kavourmas meat (alternatively, use a cured meat)

1 onion, 2-3 cloves garlic, chilli

5-6 cherry tomatoes

Sprinkle of sugar

1 teaspoon olive oil

4 eggs

Teaspoon of yoghurt

1 teaspoon red wine vinegar

Salt, pepper, parsley, lemon to serve


HOW TO?

1️⃣In the olive oil and in a flat medium heat, pan, sauté the meat for 2-3 minutes.

2️⃣Add the tomatoes cut in half, sprinkle the sugar and cook for 4 minutes. Add the onion, the garlic and the chilli and carry on for 2-3 minutes.

3️⃣In a bowl, whisk the egg whites with the vinegar. Add to vinegar and cook in the pan to create the omelette. Cook one side for two minutes and toss. Add the egg yolks and cook them for two three minutes. Serve with parsley and feta.
