WHAT?
½ kg fish
Lemon slices (½), rosemary, bay, a few garlic cloves
Pepper
½ kg coarse salt
A few teaspoons of extra virgin olive oil and remaining lemon

HOW TO?
1️⃣Gut the fish but leave the scales on. Add the lemon slices, rosemary, bay, garlic cloves and pepper in its belly. Let it marinate for a few hours.
2️⃣In greased tray we add a layer of coarse salt. Lay the fish with the lemons, rosemary etc. and add another layer of salt.
3️⃣Cook at 180 degrees for 35 minutes.
4️⃣Mix the lemon and olive oil well.
5️⃣Remove the top layer of salt with a knife, fillet it. Pour the mix of lemon and oil.
