Fantastic pasta in vegetable and tahini sauce

WHAT?

150g. Spaghetti, linguine or matsata

2 chopped tomatoes

Pinch of sugar

Grated courgette

1 carrot, a few leaves of celery

1 chopped pepper

Chopped onion, 2-3 cloves of garlic

A little bit of chilli (if you like)

1-2 tablespoons extra virgin olive oil

1 tablespoon of tahini diluted in half lemon juice

Salt, pepper

Dill, parsley and grated @mastelogr for serving


HOW TO?

1️⃣Finely chop the vegetables (not the tomato) add pepper and sauté in olive oil (average heat), let cook for 3-4 minutes.

2️⃣In a different pot, cook the pasta in vegetable stock for 1-2 minutes less than what the ideal cooking time is. Remove.

3️⃣In the vegetables, add tomatoes and sugar and cook for 5-6 minutes.

4️⃣Add the cooked pasta and 2-3 tablespoons of the water they were cooking.

5️⃣Add tahini diluted in lemon juice and stir well.

6️⃣Serve with some grated @mastelogr cheese and parsley.
