Fish - like a Greek salad

WHAT? 1 trout

2 tomatoes

1 red onion, 5 garlic cloves, chilli

½ lemon sliced

10 capers

10 olives without the stone

2-3 tablespoons olive oil, ½ lemon juice, ⅓ tablespoon mustard, honey

1 little rosemary

1 bunch of parsley

Samphire (kritamo)

Feta to serve

Salt, pepper, oregano

HOW TO?

1️⃣Degut the fish and clean well.

2️⃣Slice the lemon and stuff the fish’s belly. Do the same with garlic, rosemary, red onion, capers, samphire and olives.

3️⃣Slice the tomatoes and put at top of the fish. Lots of pepper and oregano and lay on grease proof paper tray. Wrap to an envelope and cover the fish.

4️⃣Cook at preheated oven for 35 minutes at 180 degrees. Remove the rosemary when served.

5️⃣In a bowl whisk well the olive oil, lemon juice, parsley and mustard. Pour it over the fish. Serve with feta.
