Fish ‘savoro’

WHAT?
4-6 small fish
Olive oil to fry
flour to fry
4-6 cloves of garlic
1-2 chilli peppers chopped
rosemary
4-5 cherry tomatoes
3-4 tablespoons red wine vinegar
2-3 tablespoons molasses (petimezi)
salt, pepper, oregano
HOW TO?
1️⃣Add flour on a plate, clean the fish and run every fish in the flour. Fry each fish in the olive oil 3-4 minutes each side. Remove the excess oil. 2️⃣In the same olive oil, sauté garlic, chopped tomatoes, chilli and rosemary for 1-2 minutes at medium heat. Splash the vinegar
3️⃣We add the molasses and cook for two minutes until a caramel sauce is created.
4️⃣Run each fish for 2 minutes each side from the sauce. Serve with boiled potatoe.
