Fresh salad with lupin beans

WHAT?

200g. Lupin or Broad beans

Bunch of rocket

1 grated carrot

1 spring onion

3 garlic cloves

5 cherry tomatoes

Shaving of a radish

2-3 tablespoons olive oil

1 -2 teaspoons lemon juice

Hint of French mustard

Salt, pepper

HOW TO?

1️⃣Prepare the Lupin. If they are fresh, they will need cooking for 15 minutes. If dry, soak in the water overnight and cook for twenty minutes. There are ready-made solutions in a jar or packet.

2️⃣Mix the rocket, grated carrot and sliced spring onion.

3️⃣Add the radish shavings and tomatoes. Add the Lupin.

4️⃣Whisk the olive oil, lemon, mustard. Add salt and pepper. Mix to the salad and toss well.
