Greek egg salad

WHAT? 4 soft-boiled eggs

Handful of rocket

A few (6) cherry tomatoes - in half

1 avocado - in slices

A few cloves of garlic chopped

Capers, olives

Spring onion - chopped 2-3 tablespoons of olive oil

1-2 teaspoons red wine vinegar

1 teaspoon mustard

Salt, pepper, thyme, paprika

Chilli chopped @katikidomokou soft cheese, parsley to serve

HOW TO?

1️⃣Soft boil the four eggs. From when the water boils, five minutes are enough.

2️⃣In a bowl whisk mustard, olive oil, vinegar, salt, salt, pepper, thyme, paprika and chilli.

3️⃣Mix the rocket, garlic, tomatoes and olives. Add spring onion and garlic and toss. Mix capers, olives, peel the eggs and place them at the top.

4️⃣Add sauce. At that time, cut the eggs in half to give all their beautiful yolk.

5️⃣Serve with parsley and soft @katikidomokou cheese.
