Loose omelette with asparagus

WHAT?

6-8 asparagus tips cleaned and trimmed

100g. Kavourmas Xanthi meat (cured meat)

2-3 chopped garlic cloves

4 free range eggs

50g. feta cheese

Little chilli

Pepper, salt, oregano

Finely chopped parsley, fresh mint, spring onion for serving

HOW TO?

1️⃣In non-stick pan, sauté in medium heat the meat and the asparagus for 3-4 minutes. I don’t add any olive oil, as the meat brings out its oils. Add the pepper, oregano and chilli and mix a further 2-3 minutes.

2️⃣Add the onion and garlic and sauté for 2 minutes.

3️⃣In a separate bowl, loosely mix (we just want to break the yolks - not mix it) eggs with the feta cheese.

4️⃣Add the mix in the pan and add the cover. Keep the heat medium and cook it to taste. Usually 4-5 minutes (for me) should do.

5️⃣Add parsley and spring onion to the top. Then with the help of a plate toss it over, cook the other side for 1 minute, so it keeps its moisture.
