Mouthwatering bagels

Writer's picture: Kyriakos SachinidisKyriakos Sachinidis

WHAT?

180g. Strong flour

6g. Fresh yeast or ¾ teaspoon dry yeast diluted in 60ml. Tepid water

Pinch of sugar

Pinch of salt

1 teaspoon baking soda

Poppy seeds or sesame seeds for topping

HOW TO?

1️⃣Dilute the yeast in the water and add sugar. Leave to activate for 5 minutes.

2️⃣Add the mix in the flour and salt and mix well, until a soft and elastic - but not sticky - pastry is done.

3️⃣Let it rest for two to three hours, covered with cling film

4️⃣In boiling water, add the baking soda. It will fizz. With the help of a rolling pin, create two pastries in the bagels shape with a hole in the middle. Make sure the hole is big enough, as the pastry will expand.

5️⃣Put them in the water and cook each side for two minutes. Once ready, add sesame or poppy seeds, cook in preheated 180 degrees oven for 30 minutes in grease proof paper.
