WHAT?
70g. split yellow peas
2 bay leaves
Bunch of wild rocket
1 carrot chopped in small cubes
1 onion cut in fine pieces
3 cloves garlic
5 cherry tomatoes
Bunch of parsley
Fennel chopped
1-2 tablespoons Greek olive oil @ladi_biosas
Little bit of chilli
2 tablespoons red wine vinegar
Salt, pepper, oregano
HOW TO?
1️⃣In water with bay leaves, cook the fava beans for 7 minutes. We want them whole, not to make a purée. Let them cool.
2️⃣In frying pan salt the fennel and carrot and let them sweat for 2-3 minutes. Put the vinegar and let it stand away.
3️⃣Construct the salad. Rocket, carrot, onion, fennel, garlic, tomatoes, parsley and chilli. Mix them.
4️⃣Add lemon and olive oil.
5️⃣Salt after you’ve tried. Pepper and oregano to taste.
