My perfect aubergine tennis shoes

WHAT?

2 aubergines in half

1 onion, 2-3 garlic cloves, little chilli - all sliced 1 tablespoon of tomato paste 1 grated carrot 1-2 tablespoons of red wine vinegar Salt, pepper 4 eggs 1-2 tablespoons olive oil 3-4 tablespoons red wine vinegar Parsley, feta to serve

HOW TO?

1️⃣Cook the aubergine halves in boiling water until soften (25-30 minutes). Place them in greased tray and push the middle with a fork, so it creates an empty space. Add the vinegar and salt.

2️⃣In a saucepan add the olive oil, the onions, the garlic, chilli and some ground pepper and sauté for 3 minutes. Add the grated carrot and the tomato paste and continue cooking for 2-3 minutes. Slash with 1-2 tablespoons of red wine vinegar.

3️⃣In each aubergine half, add some sauce and break an egg in the middle.

4️⃣Cook in pre-heated 190 oven for 17 minutes.
