WHAT? 150g. Rice noodles
1 pepper thinly sliced
1 sweet potato grated
1 onion, 3 cloves of garlic - thinly chopped
1 carrot grated
1 spring onion - thinly chopped
100g. scallops
Parsley
Two tablespoons sweet corn
5-6 stems of Greek saffron @krokoskozanispdoeu
2-3 tablespoons extra virgin olive oil
Ground black pepper, salt HOW TO? 1️⃣Sauté the red pepper with the onion, garlic and ground pepper for 2 minutes. 2️⃣Add the saffron and let it sauté for 2 minutes. 3️⃣Add the rice noodles and stir fry with the carrots. 4️⃣Add the seafood, the sweet corn and mix for two more minutes, or until cooked.
5️⃣Serve with parsley and spring onion. Add pepper and salt.
