WHAT? 4 free range eggs 1 onion finely chopped, 2 cloves of garlic chopped 1 tablespoon Greek yoghurt 100g. feta cheese 1 courgette spiralised or in thin slices Bunch of mint, finely chopped Pepper, oregano 1 spring onion finely chopped A few capers 1-2 tablespoons Greek olive oil @ladi_biosas Little bit of chilli chopped HOW TO? 1️⃣In pan with olive oil, sauté the courgette in medium to high heat for 7-8 minutes. Add the onion, spring onion, garlic, chilli and pepper and oregano and carry on mixing for 2 more minutes.
2️⃣In bowl, lightly mix the eggs, the feta cheese, the yoghurt, the capers and the mint. 3️⃣Add to pan and put a lid. Cook for 4 minutes in medium heat. 4️⃣Toss the omelette and cook for 1-2 minutes the other side. 5️⃣Salt after you’ve tried. Grind pepper and thyme to taste.
