WHAT?
4 eggs
1 onion, a few garlic cloves, chilli
5-6 courgette flowers
70g. Feta cheese
Mint
2-3 tablespoons Greek yoghurt
Salt, pepper
2-3 tablespoons extra virgin olive oil
Vinegar to serve HOW TO? 1️⃣Sauté the onion, garlic, chilli in olive oil at medium heat. 2️⃣Wash the courgette flowers carefully, remove the stamen and add the courgette flowers and sauté for a few minutes 3️⃣In a bowl, loosely mix the eggs with feta and yoghurt and pepper.
4️⃣Add them in the pan and cook 4-5 minutes one side. When you feel the eggs are not sticking to the pan anymore, add the mint leaves to the top.
5️⃣Toss the omelette and cook for 1 more minute (I like my eggs runny).
6️⃣Serve with pepper and a bit of vinegar.
