Prawns and courgettes

WHAT?

10-12 prawns with the heads

5-6 medium sized courgettes

1 onion, a few garlic cloves - chopped, little chilli

1 spring onion

2 chopped tomatoes

Chilli

Bunch of parsley

2-3 tablespoons extra virgin olive oil

100ml. Water

Salt, pepper, thyme

Pinch of sugar

2 tablespoons tahini diluted in lemon juice

Feta, fresh thyme to serve

HOW TO?

1️⃣Chop the onion, chilli and garlic and sauté them in olive oil for three minutes. Add the courgettes whole and sauté.

2️⃣Add ground pepper and chopped spring onion and let cook for 8-10 minutes.

3️⃣Add the chopped tomatoes, salt, sugar and water and let cook for seven minutes.

4️⃣Clean the prawns from their vein by scoring on the side and remove the black line. Add them and cook them no longer than six minutes (depends on their size).

5️⃣Add the parsley and dilute the tahini to lemon and mix. Serve with feta cheese and homemade bread.
