Razor clams in ouzo sauce

WHAT?

1 kilo clams

1 chopped tomato onion and garlic

Chilli peppers

¼ fennel and fennel seeds

Shot of ouzo

1 lemon (juice and zest)

Fresh thyme, parsley Freshly ground pepper 2 tablespoons olive oil HOW TO? 1️⃣In olive oil sauté the onion, garlic and chilli for two to three minutes. Add the fennel seeds and pepper and roast for two minutes. 3️⃣Add the tomatoes and cook for 5 minutes. Add the ouzo and let alcohol evaporate. 4️⃣Add the clams and with closed lid cook for three minutes. You can shake every now and then. Clams are ready when they are open. 5️⃣Add lemon juice and zest and serve hot with thyme and parsley.
