Rocket and mushroom salad

WHAT?

100g. Wild rocket

200g. Wild mushrooms

A few walnuts

6-7 cherry tomatoes

½ onion, 2 garlic cloves

2 tablespoons of red wine vinegar

Olive oil

For the sauce

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey

1 teaspoon mustard

Salt, pepper, thyme


Shaving of mature cheese


HOW TO?

1️⃣In high heat, sauté in olive oil the mushrooms. 3-4 minutes each side. Lower the heat and add the onion, garlic cloves and chopped in half cherry tomatoes. Sauté for two minutes and splash the vinegar and let it evaporate for one minute. Let cool.

2️⃣In a bowl, mix rocket with walnuts. Add the mix of mushrooms.

3️⃣Whisk well the sauce ingredients. Pour over the salad and grate some shavings of aged cheese.
