Salad Nicoise with a twist

WHAT?

100g. String beans (ampelofasoula)

Handful of rocket

Two free range eggs

7-8 olives

1 tin of tuna chunks

8 cherry tomatoes cut in half

Garlic, ½ onion, little chilli

Parsley, basil

For the sauce

2 tablespoons extra virgin olive oil

1-2 teaspoons of red wine vinegar

1 heaped teaspoon French mustard

1 teaspoon honey

Salt, pepper

HOW TO?

1️⃣Cook the eggs in boiling water for 5 minutes (for soft boiled).

2️⃣In a saucepan cook the beans in boiling water for 8 minutes. Remove from boil and add in cold water to stop them cooking.

3️⃣Chop onion, garlic and chilli. Sauté for extra flavour for two to three minutes in a drop of olive oil. Min beans, rocket, olives, parsley in a bowl and add tomatoes, parsley and basil at the top.

4️⃣Whisk the sauce ingredients and pour the sauce over the salad.
