WHAT? 150g αλμύρα (or samphire)
2 tablespoons red wine vinegar 5-6 cherry tomatoes 1 spring onion, 4-5 garlic cloves, chilli
1-2 courgettes grated
Bunch of chopped parsley
150g. Cured meat apaki
100g. Grated feta For the sauce 2-3 tablespoons olive oil 1 tablespoon red wine vinegar 1 teaspoon mustard 1 teaspoon honey Salt, pepper HOW TO?
1️⃣Add vinegar to the samphire, let it stand for 2 minutes. Cut the hard stems and cook in boiling water for 5 minutes. Remove and place in cold water to keep its colour. 2️⃣Chop tomatoes, chilli, garlic and spring onion. Grate the courgettes. 3️⃣Mix in a bowl the samphire, the grated courgette, the tomatoes, garlic, chilli. Place the cured meat on the top. 4️⃣Whisk the sauce and pour over the salad. Grate some feta on top.
